Caring for and Enjoying Your Honey

Storage: Honey is best stored at room temperature—pure honey will never 
spoil, and does not need to be refrigerated. In fact, cooler temperatures may cause it to crystallize more quickly (see below).

Crystallization: All pure honey will eventually thicken and crystallize—this doesn’t mean your honey is ruined or spoiled! The speed at which crystallization occurs depends in large part on the type of flowers the bees gathered their nectar from. It is easy to safely re-liquify honey. Simply heat a pan of water to 150° and remove from heat. Place your jar of honey in the pan and cover until re-liquified (you may need to repeat this process a time or two, depending on the volume of water and the size of the jar). This process can be repeated as many times as necessary over time, until you’ve enjoyed all of your honey. Never microwave honey.

Comb Honey: The wax in comb honey is edible, so to eat it, just slice off a bit—honey, wax, and all. There are many ways to enjoy it, but one of our favorites is by spreading some comb honey on a thin water cracker and topping with blue cheese. Do not heat comb honey.
